Vegetables as a Good Source of Vitamins

Vegetables are a very good source of vitamins. Due to the different cooking techniques, the vitamins in the vegetables are lost. So, steaming is considered better than boiling as the loss of nutrients is less while steaming. Eating vegetables high in vitamins help in improving health. It is very important to know which vegetable contains what kind of vitamin.

List of Vitamins in Vegetables:

Vitamin A: vegetables like sweet potato, kale, carrots, spinach, avocado, broccoli, peas, asparagus and green pepper contain vitamin A.

Vitamin B1 (thiamine): Vitamin B1 is found in peas and avocado.

Vitamin B2 (riboflavin): Avocado is rich in group B vitamins

Vitamin B3 (niacin): Vitamin B3 is found in avocado, peas, potatoes, mushrooms, corn, artichoke, asparagus, lima beans, sweet potato, kale, broccoli, carrots and green pepper.

Vitamin B5 (pantothenic acid): Vitamin B5 is found in avocado, sweet potato,potatoes, corn, lima beans, artichoke, mushrooms, broccoli, cauliflower and carrots

Vitamin B6 (pryidoxine): Vitamin B6 is found in avocado, peas, potatoes and carrots.

Vitamin B9 (folate/folic acid): Vitaminb9 is found in vegetables like lima beans, asparagus, avocado, peas, artichoke, spinach, broccoli, corn, sweet potato, kale, potatoes, carrots, onions and green pepper

Vitamin B12: Vitamin B12 is not found in any vegetable.

Vitamin C: Vegetables like artichoke, asparagus, avocado, broccoli, carrots, cauliflower, corn, cucumber, green pepper, kale, lima beans, mushrooms, onions, peas, potatoes, spinach and sweet potato are rich in vitamin C.

Vitamin D: Mushrooms are rich in vitamin D.

Vitamin E: Vitamin E is not found in any vegetables.

Vitamin K: Vitamin K is found in large quantities in leafy vegetables like broccoli, spinach and kale.
